Tropical Chia Pudding

This tropical chia pudding makes for a super easy & nutritious breakfast!


  • 1 cup milk of choice – almond, coconut or dairy milk
  • ¼ cup chia seeds
  • ½ tsp pure vanilla extract
  • Pinch of salt
  • Can add a little 100% stevia
  • ½ cup fresh pineapple
  • ½ cup mango 
  • 1 tsp finely chopped mint
  • ½ tsp of finely grated ginger for a boost   


1. Find a small jar or glass that you wish to serve the pudding out of

2. In the jar or glass, mix milk, chia seeds, vanilla, stevia (if using) and salt together

3. Chop mango and pineapple into 1cm pieces

4. Grate ginger and chop mint finely

5. Mix together fruit, ginger and mint in a small glass bowl and then pour on top of chia pudding

7.  Place in refrigerator to set overnight. It is best to make the night before and makes a super easy and nutritious breakfast!
