Carrot Salad


  • 3 Carrots
  • 1 tsp cumin
  • Olive oil
  • 1 tsp fennel seeds
  • ¼ cup sultanas
  • ¼ cup pine nuts or sesame seeds
  • Feta cheese (optional) 


  1. Place sultanas in a glass bowl and cover with water
  2. Cut carrots into circles about ½ cm thick
  3. Steam carrots for a couple of minutes until a little soft
  4. Then add carrots to a fry pan on medium to high heat with cumin, a good dash of olive oil and fennel seeds
  5. Drain sultanas and add to the fry pan along with the pine nuts
  6. Toss everything around in the pan until it gets a bit of colour – about 5-10 mins
  7. Take off the heat and place in a bowl then crumble feta cheese on top
  8. Enjoy!
