Ingredients:
- 3 Carrots
- 1 tsp cumin
- Olive oil
- 1 tsp fennel seeds
- ¼ cup sultanas
- ¼ cup pine nuts or sesame seeds
- Feta cheese (optional)
Method:
- Place sultanas in a glass bowl and cover with water
- Cut carrots into circles about ½ cm thick
- Steam carrots for a couple of minutes until a little soft
- Then add carrots to a fry pan on medium to high heat with cumin, a good dash of olive oil and fennel seeds
- Drain sultanas and add to the fry pan along with the pine nuts
- Toss everything around in the pan until it gets a bit of colour – about 5-10 mins
- Take off the heat and place in a bowl then crumble feta cheese on top
- Enjoy!
